You need to take a couple of medium zucchini, wash them, peel and rub on a coarse grater. Do the same with carrots. Then add chopped or finely grated garlic to the grated zucchini and carrots.
Squeeze all this mass thoroughly to remove excess vegetable juice. Mix the eggs with the vegetable mass, add salt. After that, take a frying pan and heat it up, pre-greasing with vegetable oil. Put the vegetable mass in a frying pan with a spoon and fry on low heat for 5 minutes on each side. Do not rush to turn the pancakes over until they are thoroughly fried. Serve zucchini pancakes without flour better with yogurt. Bon appetit!
