Cooking method
-
Step 1:
The ingredients.
-
Step 2:
Boil the cauliflower in salted water until tender, then drain in a colander. Break it into florets and trim off the thick stems.
-
Step 3:
Heat the vegetable oil in a deep skillet, add the cauliflower florets, and sprinkle them generously with breadcrumbs.
-
Step 4:
Fry the cauliflower until golden.
-
Step 5:
Meanwhile, grate the tomatoes on the coarse side of a box grater—you want the pulpy tomato juice.
-
Step 6:
Grate any hard cheese on the fine side. Whisk the eggs until smooth and stir them together with the tomatoes and grated cheese. Pour this mixture over the cauliflower right in the pan. Cover tightly and simmer over low heat until the cheese melts.
-
Step 7:
Serve sprinkled with chopped fresh herbs—whichever you like. If you'd like to add mushrooms or ham, sauté them separately first, then stir them in with the cauliflower.
-
Step 8:
Enjoy!
