Battered Fried Cabbage with Herbs
Affordable, wholesome, easy, and really tasty! This dish is usually called cauliflower in batter, and the name often gets shortened to just "cabbage in batter" — because honestly, any kind of cabbage works. That said, I still think cauliflower is the best choice; with anything else the flavor comes out a little different, and it's not quite the same dish. Everyone knows how to fry cauliflower in batter, but even without it you can make a great meal that's every bit as tasty and good for you. Just fry the leaves of ordinary green cabbage in batter and the flavor holds its own against cauliflower — and the method is barely any different.
Cooking method

Step 1:
Pick a head with firm leaves. Cut it in half and gently separate the leaves, trimming them away from the core.

Bring a large pot of salted water to a boil and drop in the cabbage leaves. Return to a boil and cook until just tender.

In a large bowl, whisk the eggs with a little water, then add salt, flour, and crumbled dried herbs. Mix well so there are no lumps. The batter should be about as thick as heavy sour cream.

The cabbage is cooked.

Heat vegetable oil in a deep skillet. Cut each leaf into a few pieces, dip in the batter so it's evenly coated, and add to the pan.

Fry on both sides
