Apple Cinnamon Pancakes

  • Peel the apple and grate it finely until it's almost a purée. Pour the milk into a bowl, then add the grated apple, eggs, sugar, salt, and cinnamon. Gradually work in the flour a spoonful at a time, mixing thoroughly so no lumps form. The batter should be thicker than crêpe batter — about the consistency of thick sour cream. Stir a little vegetable oil right into the batter so you don't have to grease the pan for every batch. Add just enough oil to the pan to coat the surface, no more. Spoon the batter onto a hot skillet with a tablespoon and fry until golden on each side. Serve the apple pancakes with apple slices, sour cream, and a sprinkle of sugar.
