Whole Wheat Zucchini Fritters with Sesame
A light, healthy recipe that's easy to make.
Cooking method
-
Step 1:
Wash the vegetables. Peel the zucchini if needed and scoop out any large seeds. Grate the zucchini on the coarse side of a box grater and squeeze out the excess liquid.
-
Step 2:
Peel the carrot and garlic. Coarsely grate the carrot and roughly chop the parsley, and add both to the zucchini. Press the garlic through a garlic press and stir it in.
-
Step 3:
Add the raw egg, salt, spices, and sesame seeds. Mix well.
-
Step 4:
Add the flour last and mix again. Go by the consistency — you may need anywhere from 3 heaping tablespoons up to 5.
-
Step 5:
Stir until combined.
-
Step 6:
Spoon the zucchini batter onto heated oil and fry until golden. Flip with a spatula and finish cooking the second side. Keep the heat a touch below medium.
-
Step 7:
Serve the finished fritters with yogurt.
- Need something quick to serve with tea? Want a light breakfast or a little snack? Then you'll definitely want to know how to make zucchini fritters — they're also worth knowing if you're watching your weight, since zucchini is fairly low in calories, and it's easy to make a lighter, diet-friendly version. There are a few ways to cook them: most often they're simply pan-fried, but you can also bake them in the oven. You can make them savory or sweet, and the batter can include other ingredients for variety — garlic, cottage cheese, or brined cheese. Skip the egg and you get a vegan version, though you can't really do without flour here (although you can swap it for semolina and make a semolina version instead). To make the fritters more wholesome, fold in other vegetables or fruit — zucchini-and-apple or zucchini-and-carrot fritters both work well. For extra-fluffy fritters, add a little baking soda and whip the batter a bit, or make them with kefir or buttermilk.
