Whole Wheat Zucchini Fritters with Sesame

  1. Step 1:

    Wash the vegetables. Peel the zucchini if needed and scoop out any large seeds. Grate the zucchini on the coarse side of a box grater and squeeze out the excess liquid.

    Peel the carrot and garlic. Coarsely grate the carrot and roughly chop the parsley, and add both to the zucchini. Press the garlic through a garlic press and stir it in.

    Add the raw egg, salt, spices, and sesame seeds. Mix well.

    Add the flour last and mix again. Go by the consistency — you may need anywhere from 3 heaping tablespoons up to 5.

    Spoon the zucchini batter onto heated oil and fry until golden. Flip with a spatula and finish cooking the second side. Keep the heat a touch below medium.
