- Bracken fern with meat is a traditional Korean dish, and Korean cooking is growing more and more popular. One of its hallmarks is a lower share of animal protein and generous use of vegetables and roots. Among plants, Koreans favor lotus root, bamboo shoots, and fern. Fern is the base for such national specialties as gosari-namul and bibimbap, and it also goes into salads and soups. The pairing of fern with fried pork or chicken is especially loved in Korea and beyond. Thanks to its perfectly balanced blend of spicy, salty, and lightly sweet flavors, this dish has become popular in many countries. Fern is the main ingredient here—everything else is there to complement and set off the taste of this exotic plant. This recipe uses salted young fern shoots (gosari). You can salt them yourself or buy them ready-made at a market or supermarket. Before cooking, the fern needs to be soaked in water to draw out excess salt: cover the salted fern with plenty of water, changing it now and then—ideally, soak the shoots overnight. Then drain the salty water, rinse and clean the fern well, spread the shoots on a paper towel, and pat dry. Cut the stalks into pieces about 2½ inches (6 cm) long. Rinse the pork, pat it dry, and cut it into small strips as well. Peel, wash, and dice the onion. Pour vegetable oil into a heated skillet and fry the onion. Add the sliced pork and fry until golden. Add the fern to the meat and fry over medium heat for 4 minutes. Take the pan off the heat and add the seasonings and soy sauce. Mix thoroughly. Peel and chop the garlic and add it, along with the sesame seeds, to the fern and meat. Taste and adjust the seasoning. Rinse and finely chop the cilantro, add it to the pan, and stir. Sprinkle in the sesame seeds and mix once more. Transfer the finished dish to plates and garnish with green onions. Enjoy!
