  • A trip out into nature just isn't complete without kebabs—everyone loves them, young and old alike. For skewers, lean pork is the best choice, ideally a tenderloin without much fat. The better the meat, the tastier the finished dish. The marinade deserves special mention, too: it determines how juicy, aromatic, and spicy the meat turns out. 1. Choose good-quality, fresh pork tenderloin. Trim off any excess fat and silverskin, then rinse the meat under running water and pat it dry with paper towels. Cut it into cubes about 1¼–1½ inches (3–4 cm). 2. In a separate bowl, combine the seasonings and spices: caraway, coriander, oregano, paprika, turmeric, fennel seeds, allspice, ground black pepper, and cinnamon. Add salt and pour in the lemon juice and olive oil. Mix everything thoroughly into a smooth paste. 3. Put the pork in a deep bowl and pour the aromatic paste over it. Toss so every piece is coated with the marinade. Cover the bowl with plastic wrap or a lid and refrigerate for 2 hours—or overnight if you have the time. 4. Thread the pork onto skewers.
