Beef Zrazy Stuffed with Cheese, Egg, and Herbs

Delicious meat zrazy (stuffed patties) with a cheese filling. I loved how unexpected they are — you can't really tell when you taste them, but the recipe takes a fresh direction; my family didn't even notice and happily cleaned their plates. Since I decided to cut bread out of my diet, and everyone in the family loves zrazy, I swapped the bread for cabbage, and instead of flour I used an egg wash — and it worked: the meat came out very juicy, smooth, tender, and pleasant. I also made the filling of cheese, egg, garlic, and herbs for the first time. I loved how the cheese turned stretchy after cooking, and the boiled egg and garlic blended with it into a kind of sauce. Give it a try!

  • Make the meat mixture: grind the beef through a meat grinder along with the onion and cabbage, season with spices, add an egg, and knead well. Boil the eggs and chop or grate them. Grate the cheese. Chop the dill and garlic. Combine the eggs, cheese, herbs, and garlic, and stir in the sour cream. Shape the meat mixture into flat patties, place the cheese-sour cream-egg filling in the center, seal the seam, and form the zrazy. Make an egg wash, dip the zrazy in it, and fry them in a well-heated skillet, then cover with a lid and cook through — or bake in the oven, whichever you prefer. Serve with any side dish or sauce.
