Eggless Vegetarian "Omelet"

A great idea for a vegetarian menu — as always, simple and delicious! It's very quick and easy to make, and it works for vegetarians, for anyone observing a fast, or for those watching their diet. Back when I was fasting, I really wanted to add some variety to my meals, so I dug through some old magazines, found this recipe, made it, and loved it. The flavor is lovely, it smells of warm Eastern spices, and the color is bright and inviting.

  • In method, taste, and aroma this is like scrambled eggs with tomatoes — only instead of eggs, it uses a batter. Let's get started. Fry the turmeric and curry powder in hot oil for 2–3 seconds. Add finely chopped onion and fry until golden. Add the diced zucchini and fry it too. Add a roughly cut tomato. Cover and simmer over low heat for 15 minutes. Meanwhile, make the batter: mix the flour with water and, if you like, add a little turmeric and curry powder. Go back to the vegetables, salt them, and simmer for another 5 minutes. Pour the batter over the vegetables so they're covered, stirring a little so it runs down between them. If you didn't salt the batter, salt the "omelet" lightly now. Cover and cook another 5 minutes, until the batter sets but stays tender and slightly soft. Season with pepper and sprinkle with herbs. The omelet is ready — serve hot, garnished however you like.
