Vegetarian omelet without eggs

A great idea for a vegetarian menu - as always simple and delicious! This is a very simple and quick to prepare dish, suitable for vegetarians, as well as for people who keep a fast, or those who follow a diet. When I was fasting, I wanted to diversify my food so much, so I dug into old magazines, found such a recipe, cooked it and was satisfied, the taste is pleasant, the smell of oriental seasonings and spices, the color is bright and attractive.

The cooking method, taste and smell resembles scrambled eggs with tomatoes, only instead of eggs - batter.
Getting down to cooking;
Fry turmeric and curry in preheated oil for 2-3 seconds.
Add finely chopped onion and fry until golden brown.
Add the zucchini, diced and fried as well.
Add a tomato, cut arbitrarily.
Cover everything with a lid and simmer on low heat for 15 minutes.

Go back to our vegetables, they need to be salted and simmer for another 5 minutes
Fill the vegetables with batter, so that they are covered with it, you can mix a little so that the batter goes between the vegetables.

Cover with a lid and fry for another 5 minutes until the dough is baked, while it should remain tender and a little faded.
Pepper and sprinkle with herbs
The omelet is ready, served hot, decorating at your discretion.
