Cooking method
- Slice the pork as you would for chops (thin cutlets), then pound flat. Season with salt and pepper. At one edge of each slice, place a piece of lard and 2 cloves of garlic. Roll the pork up into a roll and tie it with kitchen string. Fry lightly in vegetable oil. Then transfer to a baking dish, brush with sour cream, and bake in the oven until done. You can also braise the pork rolls in broth instead.
