Pork and Potato Azu

A delicious dish for a hearty family dinner! I came across the recipe years ago in some magazine. Now I make this pork azu all the time — my family loves it.

  • Cut the meat into small cubes and fry in a Dutch oven (I use a skillet, then transfer everything to a pot) in vegetable oil until golden brown. Add the onion, sliced into thick rings, and fry a few minutes more. Stir in the tomato paste and simmer until done. Add the garlic, pepper, and salt, and mix well. Separately, fry the potatoes, cut into batons, until tender, along with the pickles, grated on a coarse grater or cut into thin strips. Add the potatoes and pickles to the meat, pour in some water, and simmer until everything is tender. Starchy, floury potatoes work best here — they taste better.
