- A little stand from the local meat plant opened up near our house. For six months now, all kinds of wieners, salamis, and sausages have been keeping our hungry stomachs happy. We've boiled them, we've fried them — and now we've arrived at battered frankfurters. This recipe swept through the household in a flash, and now nearly every family here has frankfurters for breakfast. Buy good, firm frankfurters — the kind that hold together once the casing is off. Boil them for about 10 minutes. Make the batter: pour milk into a deep bowl and add the granulated sugar and a little salt. Whisk the yolk of one egg with vegetable oil and stir it into the milk. Sift the flour and add it to the bowl. Mix well until you have a smooth batter about the thickness of sour cream. Separately, whisk the egg white to stiff peaks. Fold the batter and the beaten white together and stir. Heat vegetable oil in a skillet and fry the frankfurters, dipping each one in the batter first. Set the fried frankfurters on a plate and sprinkle with fresh herbs.
