Lazy Cabbage Rolls Baked with Pork, Tomato, and Sour Cream

Juicy, wonderfully tasty cabbage rolls that any cook can pull off! I love stuffed cabbage rolls, but honestly, sometimes I just don't have the time or the patience to fuss with them. So I have this recipe called "lazy cabbage rolls in the oven." There are lots of ways to make it, but here's how I do mine.

  • Boil the rice. Shred the cabbage and salt it; once it has sat a while, squeeze out the juice. Take pork — or beef, in which case add a little lard so the mixture isn't too lean — and grind it in a meat grinder. In a large skillet, sauté diced onion until golden, then add coarsely grated carrot, the ground meat, tomato paste (though I prefer plain ketchup), and sour cream. Let it all simmer a bit. Combine this sauté with the rice and cabbage, then season with salt and pepper. Transfer the mixture to whatever baking dish you'd like to use and put it in the oven for about forty minutes — or less. I like the cabbage in my lazy rolls not too soft, still with a bit of crunch, but of course that's a matter of taste.
