Chopped Chicken Breast Cutlets

You'll fall in love with these cutlets for life! I love chicken—I mean, I really love it. I can go without just about any other food for months, but chicken is a weekly must for me. Plus you can make an unbelievable range of dishes from it, from soups all the way to smoked preparations. About two years ago my mom—also a big chicken fan—shared her recipe for chopped chicken cutlets with me. The very first time I tried them, I was hooked for good. I can honestly say they're my all-time favorite dish, and everyone who's tasted them has loved them too. So I highly recommend giving these a try.

  • How do you make them? It's simple! Take the chicken breast and cut it into cubes, roughly 3/4 to 1 inch. Don't chop them too small—chicken cooks quickly and thoroughly. Put the chopped chicken in a medium bowl, crack in the eggs, and add the mayonnaise, starch, salt, and pepper. Mix everything well with your hands; the mixture should be quite loose and pourable. Set a skillet with oil over medium heat, and once it's hot, scoop up a portion of the mixture with a small ladle or spatula and pour it into the pan. Fry the cutlets 3–4 minutes on one side, then do the same on the other. When they're all cooked, arrange them on a large platter and garnish with fresh herbs. I'm sure you'll love this dish—finger-licking good!
