- I make these with lean beef, and they come out juicy with a delicious crust. This beef patty recipe is a family signature—they always dress up a holiday table, and they're incredibly good homemade comfort food. Let's make them. Run the lean beef through a meat grinder along with a peeled onion cut into quarters and some chilled butter. Combine everything and add the potato starch, then stir in the milk, salt, and ground black pepper. Mix the meat mixture very well. Finely chop the parsley and dill, add them to the meat, and mix again thoroughly. Shape the mixture into patties and fry them in a hot skillet with a little vegetable oil on both sides until golden and crusty. The beef patties are ready—serve them with boiled rice or mashed potatoes. Enjoy!
