Cooking method
- Ready to start? Soak the liver in milk for an hour, then trim away any membranes and veins. Peel the onion, garlic, and carrots, and core the apples. Run all of these through a meat grinder. Grate the cheese, ideally on the coarse side. Combine the ground mixture in a bowl and add the eggs, brandy, salt, semolina, grated cheese, and nutmeg. Let the mixture rest for 25 minutes so the semolina can swell slightly. Fry in vegetable oil, spooning the mixture into the pan and cooking on both sides. It all comes together fast—in under 35 minutes—and it's well worth it. Your liver cutlets are ready to serve. Enjoy!
