  • Want a taste of Lithuania's culinary traditions? Then try one of the country's national dishes: this Lithuanian stuffed cabbage. Cut the cabbage into quarters and boil in salted water until just tender. Let it cool, then squeeze out the excess water with your hands. Soak the pearl barley in soured milk (buttermilk) for a few hours, then rinse it before cooking. Boil the barley until soft and fry it in the pork fat. Boil the porcini mushrooms in about 1 1/2 cups of water. Cut the cooked mushrooms into strips and fry them with the finely chopped onion—and don't discard the mushroom broth. Combine the cooked barley and mushrooms with the ground pork and beaten eggs. Tuck the filling between the cabbage leaves, press it together firmly with your hands, and transfer the stuffed head to a pot. Pour in the salted mushroom broth, cover, and simmer until tender. Just before it's done, stir in the sour cream and bring back to a boil. Serve the Lithuanian stuffed cabbage on a platter with a generous spoonful of sour cream. Enjoy!
