Norwegian Herring Salad with Apples and Cheese
This herring salad is wonderfully unusual and delicious—perfect for a special-occasion table! Norwegian cuisine has only a small handful of salads, since Norwegians tend to eat fish prepared every which way, and meat less often. There are salad recipes, though fewer than other kinds of dishes, and most of those are fish-based too. Last weekend, as I usually do, I was prepping food for the week ahead and had a craving for a fish salad—but something new and out of the ordinary. A little searching online turned up just the thing: a Norwegian salad with apples and cheese. So here's how it comes together.

Cooking method
- First, clean the herring and cut it into slices, then into roughly 1/2-inch cubes. Next, cut the rye bread into sticks and then into 1/2-inch cubes, and fry them in vegetable oil until crisp and golden. Now grate the apple and cheese on the fine side of a grater, and finely chop the onion. Combine all the prepared ingredients and toss with the dressing (whisked together from the oil, vinegar, and mustard).
