  • "Mother-in-law's tongue"—really more of an appetizer than a salad—practically invites you to get creative. I've already found at least five different versions, then came up with my own after seeing what restaurants do. Here we'll cover the basic recipe, the bare essentials. It's the quickest, simplest way to put together a spicy little starter, and anyone who loves a bold garlic kick will enjoy it. Slice the eggplants lengthwise into planks—that's what gives us the "tongue" shape. Salt them on both sides. After ten minutes, shake or blot off the moisture the salt has drawn out, then fry the slices in vegetable oil until golden on each side. Let them drain (on a paper towel, for instance). Press the garlic through a garlic press and stir it into the mayonnaise. Slice the tomatoes into rounds. Now spread a little garlic mayo on one half of an eggplant plank, top with a tomato slice, add a sprig of dill, and fold the free half of the plank over. Secure with a toothpick. Pile all the folded tongues on a plate. Sometimes they're rolled up instead, in which case you can cut the tomatoes into wedges. As for variations: the eggplant is sometimes fried in batter, which changes the look since the edge loses its dark color. The spread can also be made with a paste of ground walnuts and garlic, or with mayonnaise, garlic, and melted or hard cheese. You could add a ring of bell pepper along with the tomato. There's always room to improvise.
