A pretty, colorful omelet that's perfect for breakfast — a bright start to the day! This recipe is my secret weapon. "Sausage omelet" works some kind of magic on my husband; just the mention of it puts him in a happy little daze. For breakfast I like to make something quick and tasty, and to plate it so that one look lifts your mood. That's how the idea for this omelet with sausage in pepper rings came about.
