- I was once paging through a book called "Cuisines of the World." I was in the mood to try something new, unfamiliar, untasted. Latvian cooking caught my eye — they say it's simple and filling — so I settled on this peasant's breakfast to see for myself.
- Here's what you'll need: smoked pork loin and sausage. Cut them into neat slices (not too thin) and fry them with the onion. Boil the potatoes ahead of time, cut them into slices about 1/2 inch (1 cm) thick, fry them separately in butter, and arrange them in the skillet, alternating with the meat.
- Now beat the eggs with the milk and season with salt and pepper. Pour this over the potatoes and slide the skillet into the oven to bake — it takes hardly any time at all. Before serving, scatter finely chopped green onion over the top. A few crisp pickles alongside wouldn't hurt. And there you have it: simple, filling, and above all delicious! Those Latvian peasants clearly knew how to start the day. Add a shot of vodka and a good pickle to a breakfast like this, and your day is off to a fine start.
