- In Belarus, tons of dishes are made with potatoes, and these meat zrazy with omelet are built on potato, too. (Zrazy are stuffed meat patties.) Here's how I make them. First I take a large potato, peel it, and grate it, then squeeze out and drain the juice from the grated pulp. Add an egg to the potato and mix well. Take the ground meat, season it with your favorite spices, and salt and pepper to taste, then mix it into the potato. Now make the omelet: beat the eggs with a little milk using a mixer, pour them into a hot skillet, add chopped herbs, and cook the omelet. Once it's done, cut it into strips and roll each into a little roll. Take the meat mixture and pat it into rounds, placing an omelet roll in the center of each. Shape the zrazy around the filling. Fry them on both sides in a skillet, then transfer to a baking sheet. Make the sauce: finely grate the cheese, mince the garlic, and stir both into the sour cream. Spoon the sauce over the zrazy and bake until golden brown on top. This makes a great meal on its own or as a main course.
