  • I first came across this recipe for suckling pig with onion-honey sauce at a culinary show, and the first time I tasted it I was simply amazed by how tender it was. I only tackle it when I've got a few hours of free time. First, I roast the pig in the oven until deep golden brown — the timing depends on both your oven and the size of the pig. Then I make the onion-honey sauce: sauté finely chopped onion, pour in the cream and honey, and blend the mixture with an immersion blender. Once the sauce is ready, I boil the potatoes, carrots, and zucchini; I peel the zucchini and cut it into cubes. I set the cooled pig on an oval platter and slice it into portions while keeping the shape of the whole roast, then surround it with the vegetables and herbs. I always serve it with the onion-honey sauce. Suckling pig with onion-honey sauce and vegetables is a treat for anyone who loves traditional Russian cooking — and those who've never tried such tender pork always come back for seconds.
