- Flipping through an old recipe collection, I came across these meat "flowers" of ground pork and beef; the recipe stuck with me for years, and now I've finally decided to write it down. I start by making a dumpling dough from flour, egg, water, and salt. Then I slice the onion into thin rings and fry them in a mix of butter and margarine. Next I dice firm tomatoes, add them to the golden onion, season with salt, and stir. Then I roll the dough out into a thin sheet. I grind the pork and beef together. Finally, I spread a layer of the ground meat over the dough and roll it up so the meat is inside. I cut the big roll crosswise into small rolls about 1¼ inches (3 cm) thick, and lightly dredge each one in flour on both sides. I grease a baking sheet, arrange the rolls on it, top them with the sautéed onion and tomatoes, and bake for half an hour at 400°F (200°C). I rush to get them on the table, garnished with parsley leaves — and within a few minutes, the only thing left for one of my guests to do is wash the dishes. If there's time, you can make a second batch of these meat "flowers."
