Cooking method
- I like to start with the filling. Take the pork, chop it finely, and mix it with finely chopped onion. Season with salt and pepper to taste. Now for the potatoes: grate them raw, then be sure to squeeze off the liquid. Let the grated potato sit for a few minutes, then drain off the juice again. Season with salt and pepper to your liking. Take a handful of that potato, shape it into a ball, and tuck a spoonful of the pork filling into the center. Roll each koldun in flour and fry in butter. Arrange the fried dumplings in a single layer in a baking dish and pour sour cream over them. Bake for 40 minutes. These are best with a spoonful of sour cream, but they're also great with vegetables, pickles, or sauerkraut — and if you're up north, soaked lingonberries make a wonderful match. Enjoy!
