  • If you've got leftover meat or poultry from another meal and aren't sure what to do with it, this recipe is for you — chances are you'll want to make it first next time. I know I do. I highly recommend these croquettes. Put whole, unpeeled potatoes in a large pot of water and cook over low heat for about 30 to 40 minutes. When they're done, drain and set them aside to cool. While the potatoes cook, make the filling: in a large bowl, combine the chopped garlic, chopped parsley, and grated lemon zest and mix well. Add the pieces of meat, then the eggs and grated cheese, and season with salt and pepper. Knead the mixture thoroughly until it's evenly combined. Peel the cooled potatoes and mash them, then mix them into the meat. Add a little water or broth so the mixture isn't too dry. Shape it into oblong patties — keep them on the small side. Pour the breadcrumbs onto a plate and roll each croquette to coat. Set a skillet over the heat and add the olive and vegetable oil. Once the oil is hot, add the croquettes and fry over medium heat, turning now and then, until golden. Transfer the fried croquettes to a paper-towel-lined plate to drain. Once they're all done, serve them up. Quick and easy!
