- For a hearty breakfast for two, I use 4 eggs, 6 medium tomatoes, and 2 bell peppers. Chop the tomatoes and peppers finely. Tomatoes are usually cut into big rounds, but the whole trick to my recipe is chopping them small. Put them in a skillet over low heat and simmer until they cook down into a "tomato juice." That's your sauce. Now crack the eggs right into the sauce, season with salt, and add your favorite spices. Cook for a few minutes, sprinkle with grated cheese, and serve! For color and a pretty finish, scatter some fresh herbs on top — parsley, dill, whatever you like. Delicious, juicy, and beautiful! You're going to love it. Enjoy!
