Cooking method
- Rinse the pork, cut it into pieces, and pound both sides. Rub both sides with salt and pepper to taste. Lay the meat in a greased baking dish. Peel the onion, halve it, and slice into thin half-moons — dampening the onion and your knife in cold water first helps keep your eyes from stinging. Scatter the onion over the pork. Peel the potatoes and slice into thin rounds; the thinner the slices, the faster it bakes, since potato takes longer than everything else. Spread the potato evenly over the onion, brush the top with mayonnaise, and sprinkle with grated cheese. Preheat the oven to 250°F (120–130°C) and bake for about an hour. For the first half hour I recommend covering the dish with foil so it stays juicier, then remove the foil and let the cheese brown. This recipe has been a hit with all my friends.
