Braised Cabbage with Beef
Braised cabbage is enjoyed just about everywhere it grows — a wonderful dish for everyone! It's cooked and loved in Canada, Germany, Ukraine, and, of course, Russia. The ingredients couldn't be simpler, yet the flavor is downright magical. And it's good for you, too!
Cooking method

Step 1:
Rinse and pat the meat dry. Put salt, coriander, and dried basil into a mortar.

Peel and wash the vegetables.

Step 3:
Shred the cabbage.

Step 4:
Put it in a cauldron or another heavy-bottomed pot.

Step 5:
Add 1 cup of water and a little salt.

Step 6:
Cover it first with a plate, then a lid, so the liquid doesn't evaporate. Simmer over very low heat, stirring every 20–30 minutes.

Step 7:
Cut the meat into pieces however you like.

Step 8:
Heat a little oil in a skillet and add the meat. Season with salt and pepper, and don't stir it.

Sear until a crust forms.

Step 10:
Flip and keep cooking.

Step 11:
Transfer the cooked meat to a container or bowl for now.

Step 12:
Dice the onion.

Step 13:
Dice the carrot.

Step 14:
The browned juices are still in the meat skillet. Add water and the remaining oil to them.

Step 15:
Grind the spices in the mortar.

Step 16:
Add the onion and carrot to the skillet. Add the spices and sauté.

Step 17:
After 5 minutes, add the sun-dried tomatoes. Stir, cover, and cook for another 15 minutes.

It should look like this.

Slice the garlic thinly.

Step 20:
Add the garlic and tomato paste to the onion and carrot and cook the paste briefly. Stir in the soy sauce, then take the pan off the heat.

Step 21:
An hour into braising the cabbage, stir in the onion and carrot mixture.

Step 22:
Stir and cover.

Step 23:
After another 2 hours, add the meat. Stir and braise for another 1 to 1.5 hours.

Step 24:
When the cabbage is done, plate it up.

Step 25:
Serve, sprinkled with fresh herbs.
