Step-by-step cooking
Step 1:
Prepare the ingredients according to the list. The rabbit carcass will be divided into portions together with the bones. We'll wash the meat. Pour vegetable oil into the pan (it is better to use a deep cast-iron pan or with a thick bottom). Heat the oil over medium heat and put the cooked rabbit meat on it. Fry the rabbit meat over medium heat until it turns slightly white, fry for about 20 minutes, stirring occasionally.
Step 2:
While the meat is frying, you need to cook the vegetables. Carrots are washed, cleaned and grated on a medium grater.
Step 3:
Peel the onion from the husk and finely chop with a knife.
Step 4:
Zucchini or zucchini of small size is washed, peel, remove the core with seeds (if the zucchini is young and tender, you can cook it with the peel and core). Cut the zucchini pulp into small cubes.
Step 5:
My potatoes, peel them, cut them into cubes of the same size as zucchini.
Step 6:
Bulgarian pepper is washed, cut out the stalk with seeds, cut it into cubes or strips, as you like.
Step 7:
Tomatoes are washed, cut out the attachment point of the peduncle, cut tomatoes into cubes or arbitrary pieces of small size.
Step 8:
Put vegetables in the pan for rabbit meat: carrots, onions, potatoes, bell peppers and zucchini. Add spices: salt and ground black pepper to taste. Fill with water so that it reaches half of the contents of the pan. Cover the pan with a lid. Simmer for about 30 minutes.
Step 9:
Then add the cooked tomatoes, stir and simmer over medium heat for about 10 minutes. Then turn off the fire. Let the dish stand under the lid for about 20 minutes and serve it to the table. With fresh bread, herbs and any sauce if desired. Bon appetit!
