Chicken Breast Braised in Sour Cream with Carrots and Celery
Chicken breast braised in sour cream — juicy, tasty, and tender! Serve it with any side you like. It pairs wonderfully with mashed potatoes or any vegetable purée, pasta, boiled rice, or buckwheat — everything's delicious under that sour-cream sauce!
Cooking method
-
Step 1:
For chicken breast braised in sour cream, gather chicken breast, sour cream, onion, salt, and a pepper blend. For color and flavor, you can add bright vegetables — carrots, red or orange bell pepper, green celery stalks, and so on. I added celery stalks and carrot.
-
Step 2:
Prep the vegetables: peel the onion and cut it into thin half-moons (though the cut doesn't matter much here), and dice the carrot and celery stalk small.
-
Step 3:
Pour sunflower oil into a skillet and heat it. Add the onion first, cook it briefly, then add the rest of the vegetables. If you like things well browned, sear the vegetables over high heat; for a softer, more tender result, just braise them together.
-
Step 4:
Rinse the chicken breast, pat it dry with a paper towel, and cut it into small pieces across the grain.
-
Step 5:
Add the chicken pieces to the vegetables in the skillet — do it a little at a time, not all at once, stirring constantly. Try to get each piece in contact with the hot skillet right away, so the surface sears, sealing the meat and keeping it juicy.
-
Step 6:
Add pepper, but wait to salt until all the pieces have seared, so the meat doesn't release its juices. Sear all the chicken this way.
-
Step 7:
Add the sour cream and braise over low heat for about half an hour. Salt to taste, add a little water, and toss in a bay leaf, turmeric, or any other chicken seasonings.
-
Step 8:
Sprinkle the finished chicken in sour cream with fresh parsley and serve with any side. Enjoy!
- You can make chicken braised in sour cream all sorts of ways, with different flavorings and add-ins. Even if you simply pour sour cream over the chicken and braise it, it comes out remarkably tasty and tender. And once you add onion and carrot, it turns into something truly special!
