Beef Liver Braised in Sour Cream

A very tasty and nourishing beef-liver dish! Beef liver is rich in vitamin A and the B vitamins, and it packs more iron than beef itself, so it's a good thing to work into your menu more often if your iron is low. Not everyone is a fan of liver — some find it has an off taste — but liver actually makes for wonderful dishes. The whole secret to delicious beef liver comes down to choosing the right ingredients.

    Beef liver in sour cream doesn't take much in the way of ingredients, time, or effort. Fresh, chilled liver is best. Rinse it thoroughly under running water, trim off the membranes, and cut it into small pieces or strips, whichever you prefer. Rinse the liver once more and let it drain in a colander.

    Peel the onion and cut it into small dice.

    Pour the vegetable oil into a skillet and turn on the heat. Add the onion and fry it until translucent.

    Add the cut-up beef liver to the onion.

    Fry it for 15 minutes, stirring with a wooden spoon so the liver browns on both sides. The frying time depends on how large you cut the pieces. Then add the sour cream (the higher-fat, the better), pour in the water, and add salt and ground black pepper. Stir the liver right away so the seasonings and sauce blend and soak in.

    Cover the skillet and braise the liver over medium heat for about 15 minutes. Remove the lid and stir. In about a third of a cup of water, whisk in 1 1/2 tablespoons of wheat flour until smooth, with no lumps. Pour the flour slurry into the skillet and stir. Cover again and braise for about 5 more minutes to thicken the sauce. Turn off the heat and let the dish rest, covered, on the stove for a bit.

    Serve the liver in its sour-cream sauce as a dish on its own, simply with bread, or round it out with boiled pasta, mashed potatoes, or another side. Enjoy!
