Red Beans with Chicken

An unusual dish with an absolutely delicious sauce! Red beans with chicken made this way is a complete meal on its own — about the only things to add are some fresh herbs and a slice of white bread. Pieces of chicken, a bean side, and to top it off a wonderfully spiced sauce — three in one!

Cooking method

    Gather the ingredients from the list: chicken (whole or in parts), red beans (cooked ahead or canned), oil, sugar (brown is ideal), onion, garlic, and spices — and be sure ginger is among them.

    Cut the chicken into serving pieces.

    In a bowl, combine the chicken with the spices, ketchup, soy sauce, garlic, and onion. Mix well and leave to marinate for 2 to 2.5 hours.

    Heat the sugar and oil in a sauté pan or small pot until browned, then immediately add the chicken pieces and quickly sear them on all sides.

    Add a cup of water to the marinade and pour it into the pan with the chicken. Simmer for 20 minutes.

    Add the red beans and simmer for another 15–20 minutes with the beans.

  • I made this homemade red beans with chicken based on a Caribbean recipe. I couldn't find a couple of the ingredients, but it still came out absolutely amazing! I can say for sure that the star of this dish is the thick, spiced sauce that develops from searing and braising.
