Red Beans with Chicken
An unusual dish with an absolutely delicious sauce! Red beans with chicken made this way is a complete meal on its own — about the only things to add are some fresh herbs and a slice of white bread. Pieces of chicken, a bean side, and to top it off a wonderfully spiced sauce — three in one!
Cooking method
-
Step 1:
Gather the ingredients from the list: chicken (whole or in parts), red beans (cooked ahead or canned), oil, sugar (brown is ideal), onion, garlic, and spices — and be sure ginger is among them.
-
Step 2:
Cut the chicken into serving pieces.
-
Step 3:
In a bowl, combine the chicken with the spices, ketchup, soy sauce, garlic, and onion. Mix well and leave to marinate for 2 to 2.5 hours.
-
Step 4:
Heat the sugar and oil in a sauté pan or small pot until browned, then immediately add the chicken pieces and quickly sear them on all sides.
-
Step 5:
Add a cup of water to the marinade and pour it into the pan with the chicken. Simmer for 20 minutes.
-
Step 6:
Add the red beans and simmer for another 15–20 minutes with the beans.
-
Step 7:
Your homemade red beans with chicken are ready.
- I made this homemade red beans with chicken based on a Caribbean recipe. I couldn't find a couple of the ingredients, but it still came out absolutely amazing! I can say for sure that the star of this dish is the thick, spiced sauce that develops from searing and braising.
