Homemade Sprats from Baltic Herring

  • Remove the fish's head and belly, rinse the fish, and blot off any excess moisture with a paper towel. Brew the tea with a cup of boiling water and let it steep for 15–20 minutes, then strain — you should have about ½ cup of strong brewed tea. Season the fish with salt and pepper. Lay a few bay leaves on a baking dish, then arrange the fish in even layers on top. Carefully pour the brewed tea over the fish without rinsing off the seasonings, and just as carefully add the vegetable oil — enough that the fish is almost (but not fully) covered. If you like, add a crumbled bouillon cube. Braise the fish at 300°F (150°C) for 1 hour 30 minutes. The liquid will cook off and the fish will turn golden; only the fish and oil should remain. Your homemade sprats are ready! Let them cool and serve, or transfer them to a jar and keep in the fridge. Enjoy!
