Beans in Tomato Sauce for Winter
An amazing preserve to put up for the whole family. I always can a few jars of beans in tomato sauce for the winter — they make it so easy to throw together a pot of borscht later on.
Cooking method

Step 1:
To make beans in tomato sauce for winter, we'll use dry red beans, good-quality tomato paste, water, and salt.

Rinse the beans well and soak them for 10–12 hours (overnight is easiest).

Rinse, drain, cover with fresh water, and cook the beans until tender.

The cooked beans will have swelled up even more.

Step 5:
Thin the tomato paste with water at a ratio of 1:3.

Step 6:
Pour the tomato sauce over the cooked beans, add salt, and simmer for another 30–40 minutes. Once you're happy with the flavor, ladle it hot into small sterile jars, seal them, and set them upside down under a blanket until completely cool. They can be stored at room temperature.
