How to make a simple eggplant caviar for the winter will you lick your fingers?

1. Pre-washed eggplants cut into cubes, sprinkle with salt and leave for half an hour, then squeeze out the moisture.

2. At this time, peel the onion, cut into cubes. Peel the pepper from the seeds, also cut into cubes. Peel the carrots, grate them on a coarse grater. Cut the tomatoes into cubes.

3. Fry the eggplants for 10 minutes on half of the vegetable oil.

4. In the second half of the oil, fry the onion, carrot and bell pepper (10 minutes), add the tomatoes, stir and cook for another 5 minutes.

5. Mix the contents of two frying pans, season with salt and pepper, add sugar and tomato paste, previously diluted with water.

6. Put the mixture on a low heat and simmer for 15 minutes, add the chopped garlic a minute before the end.

7. Place the caviar in sterilized half-liter jars, cover with lids.

8. Sterilize the caviar for 10-15 minutes, for which lay a towel in a large saucepan, put jars of caviar on it, pour water over the shoulders, wait for the liquid to boil and count the time.

9. Roll up the jars with lids, turn them over, cover them with a blanket for a day.
