Step-by-step cooking
Step 1:
We will wash the tomatoes and, having freed them from the stalks and tails, drain and cut into pieces.
Step 2:
Wash tomatoes in a convenient way. It can be any shredding agent that can turn tomatoes into mush. I ground everything in a blender until the mass acquired the desired consistency.
Step 3:
Then I poured the tomato mass into the saucepan and added oil.
Step 4:
Put sugar in the juice, dissolve it and simmer for half an hour.
Step 5:
In the meantime, let's do the other components. We will clean the washed sweet pepper from the seeds, remove the stalks and cut into the desired format (it all depends on what you will grind the ingredients with).
Step 6:
Peel and rinse the garlic.
Step 7:
We will cut, having freed from seeds and a tail, chili.
Step 8:
Chop garlic with peppers.
Step 9:
Send it all to the tomato mass. And at the very end, about 3 minutes before switching off, add salt to taste and add your favorite spices.
Step 10:
During these fifteen minutes, while all this beauty is being boiled, let's sterilize both the jars and the lids. Let them stand, because there should be no moisture in them.
Step 11:
Is our lure ready? Immediately pour into jars. After rolling it up, let it cool down.
And more tips
To cook a delicious and fragrant lure for the winter, buy the freshest and ripest vegetables.
Try to make this preparation in season – you will not have to overpay for fresh vegetables.
If you like spicy adjika, put garlic and chili pepper, as in my recipe. If not, then cook with tomatoes.
Do not add salt to the adjika if you realize that it is not salted enough – try it at the end and, if anything, add salt.
If you cook zamanikha in large quantities, choose not the dishes that are higher, but that are wider (so that the gas gets everywhere) – so the whole mass will be boiled.
During the cooking of the adjika, do not forget to stir the mass regularly – in the burnt form, the taste will be spoiled.
It is better to pour the bait into a small container.
