- Start by dicing the onion small; peel it first. 2. Heat the olive oil in a skillet and add the onion. Sauté until translucent. 3. Meanwhile, soak the soft interior of the bread and chop half of the parsley, stirring the onion now and then. 4. In a bowl, combine the ground meat, parsley, and the soaked bread with the water squeezed out. 5. Add the sautéed onion, garlic powder, salt, and pepper, and crack in the egg. 6. Mix the meat and everything added to it until well combined, then set the mixture aside and make the sauce: 7. Set the pot you'll braise the meatballs in over the heat. Add the fresh tomatoes and the canned tomatoes in their juice, then the dried garlic, ground black pepper, salt, and Italian herb blend. Stir and bring to a boil. 8. Meanwhile, chop the basil and the remaining parsley and add them to the sauce. Lower the heat and let it simmer. Final stage: 9. Shape the meat mixture into balls about the size of a small egg, dropping each one into the simmering sauce as you finish it. 10. Braise the meatballs, covered, for 15–20 minutes, until fully cooked. Serve over Italian pasta or your favorite side, with grated Parmesan on top. Enjoy every bite!
