French Onion Soup with Demi-Glace

The famous French onion soup — make an elegant dinner! In my family's opinion (and mine), onion soup with demi-glace is the best first course there is. Croutons and cheese, wonderful flavor and aroma... give it a try!

    1. Peel the onion and cut it into half-rings; small onions can just be halved into half-rings. 2. Heat the oil in a skillet over moderate heat, add the onion, and sauté until lightly golden. 3. Peel a garlic clove, crush it with the flat of a knife, add it to the onion, and cook for 2 minutes, until fragrant. 4. Add a sprig of thyme and cook everything together for another 5–7 minutes. 5. Add the butter, let it melt, then pour in the wine. 6. Cover and braise the onion in the wine over the lowest heat for 4–6 hours, until it turns soft and jammy. 7. Add the salt, sugar, and pepper blend. 8. Stir in the demi-glace and keep it on the heat for another 5 minutes. 9. Remove the thyme, add the chicken broth, and bring to a boil. 10. Toast two slices of baguette in a dry skillet on both sides until golden. 11. Taste the soup and add salt if needed. Pour it into an oven-safe dish. 12. Grate the cheese on the coarse side of a grater. 13. Float the croutons on the soup and sprinkle the cheese on top. 14. Bake in an oven preheated to 380°F (195°C) for 6 minutes, until the cheese melts. 15. Garnish the finished soup with a sprig of thyme and serve right away. Enjoy!
