Cooking method
1. Peel and cut the onion into half half rings. Small bulbs can be cut simply in half rings.
2. Heat the oil in a frying pan over moderate heat, put the onion, fry it until lightly golden.
3. Peel the garlic clove and crush it with a knife, add it to the onion, fry for 2 minutes (until a pleasant smell appears).
4. Put thyme (sprig), fry everything together for another 5-7 minutes.
5. Add the butter, wait until it melts, then pour in the wine.
6. Simmer the onion in wine on the lowest heat under the lid for 4-6 hours (you should get a gruel).
7. Add salt, sugar, and a mixture of ground peppers.
8. Put Demiglas sauce, mix everything and keep on fire for another 5 minutes.
9. Remove thyme, add chicken broth, bring to a boil.
10. Fry two slices of baguette in a dry frying pan on both sides until browned.
11. Taste the soup, add salt if necessary. Pour the soup into the mold.
12. Grate the cheese on a coarse grater.
13. Put the croutons in the soup, sprinkle cheese on top.
14. Put the mold in the oven preheated to 195 degrees for 6 minutes (you need the cheese to melt).
15. Decorate the finished soup with a sprig of thyme and serve immediately.
