Chicken Liver Pâté with Carrots

Cooking method

  1. Step 1:

    Heat a skillet and add the vegetable oil. Put the onion and the chicken liver in separate pans. Add the carrots to the onion.

    Once the vegetables are nearly done, add them to the browned liver. Pour in a cup of hot water and simmer for 30 minutes.

    Add the herbs, salt, and pepper, and cook another 2 minutes. Take the pan off the heat and let everything cool completely. This matters! If the cooked liver and vegetables aren't cool enough, the pâté will come out grainy when you blend it.

    Transfer to a blender and add the butter. Blend well until smooth.
