Whiting in Tomato with Vegetables

Most of us walk right past whiting at the store, and that's a shame! It turned out surprisingly delicious.

    Here's the bag of frozen whiting I used.

    Clean the fish, removing the heads and backbones. Boil in salted water, then let cool.

    Go through the fish and pick out any bones. Do this as thoroughly as you can.

    Finely chop the onion.

    Chop the celery very finely too.

    Grate the carrots on the coarse side of a box grater. Sauté the vegetables in a little oil (you can add a splash of fish broth). Stir ketchup or tomato sauce into the softened vegetables, to taste. Bring to a boil, then turn off the heat.

    Fold the picked-over fish into the stewed vegetables. Let cool. It's delicious both hot and cold. Enjoy!
