- I make this beef all the time, using my boss's recipe. The meat is cut into individual portions, which makes it easy to serve. Beef braised in tomato sauce is a wonderfully tasty, aromatic dish. Cut the meat across the grain into pieces about ¾ inch (2 cm) thick. Dredge them in flour and sear them in a skillet over high heat in hot vegetable oil. The meat should crust over right away so the juices stay locked inside. Transfer the seared pieces to a pot for braising. Sprinkle with the seasonings — dried basil, oregano, marjoram. Add the tomato purée; instead of purée you can use finely chopped fresh tomatoes with the skins removed. Top the meat with onion that's been lightly sautéed in oil and add a cup of water or broth. Cover the pot and set it over low heat. Braise for about 1½ hours, until the meat is soft and tender, stirring now and then so nothing sticks to the bottom and everything cooks evenly. At the end, season with salt and pepper, and, if you like, stir in some chopped fresh herbs and minced garlic. Serve the braised beef with mashed potatoes. Enjoy!
