- This rich, spicy sauce from Tatar cuisine brings out the flavor of any kind of meat, and the recipe is both economical and easy to make. Peel the carrot (a nice red one is best) and cut it into thin rounds; peel the onion and slice it into half-moons. Put all of it in a sauté pan, pour in the chicken broth, and set it over low heat. Once it comes to a boil, season with salt, ground pepper, and whole peppercorns to taste. Cook, stirring continuously, for a while. Five minutes before the sauce is done, add the bay leaf and the ghee. This zesty — and fairly spicy — sauce goes with just about anything: grilled chicken with a side of potatoes, or a Cairo-style meat dish, whatever you like. Just before serving, you can stir in some chopped parsley or dill. Enjoy!
