- Heat the vegetable oil in a very large skillet, then cut the pork into slices as if for chops and sear on both sides until lightly golden, then lower the heat. Carefully seed the hot pepper, finely chop the garlic and onion, add it all to the pork, and fry for another minute. Turn off the heat, then add the water, freshly squeezed lemon juice, honey, and soy sauce. Peel the grapefruit, removing the peel and white pith, separate it into segments, and cut each one in half. Now go back to the meat: slice it into very thin pieces and return it to the pan along with the finely chopped mint and the grapefruit. If you have kiwi, add the chopped flesh of a couple of small fruits; if not, the dish will be just as good without it. Stir everything together and get ready to plate this Thai masterpiece. Line a large platter with lettuce leaves, then pile the meat and everything mixed with it on top. Sprinkle with coarsely chopped peanuts and finish with a few sprigs of mint. Not only delicious, but beautiful too. I first spotted this recipe for Thai-style honey pork with grapefruit in a travel magazine, but I didn't make it until a bit later, when I got a craving for something exotic. Fans of Asian cooking will be delighted by this sweet-and-sour, tender pork.
