  • Huevos rancheros — yes, that's really the name, and there's nothing funny about it. It's a classic Spanish-Mexican dish. Look closely and it's basically fried eggs, but with southern flair — and plenty of heat, the way good Spanish food should be. Try this recipe and imagine yourself under the hot Spanish sun. First, finely chop the onion and garlic and add them to a skillet with olive oil. Let them just turn translucent without browning. Chop the tomatoes and peppers into small pieces and add them to the pan. Cook the vegetables for 2–3 minutes, then pour in the lemon juice, followed by the chopped parsley. Add a little sugar to round out the flavor. Stirring, cook the vegetables for another minute, then transfer everything from the pan to a plate. Next, toast the coriander seeds and pieces of chorizo in the skillet, browning the sausage on both sides. Now add the eggs and the sauce you made earlier, and cook until the eggs are set. And there's your interesting, delicious huevos rancheros.
