  • For this wonderful dish, cut the chicken across the grain into small pieces. Transfer to a bowl, add the dry seasonings and salt, mix, pour in the soy sauce, and let it marinate for about 10 minutes. Peel the onion and slice it into half-moons. Pour oil into a skillet, sauté the onion until it's partway cooked, then add the chicken, stirring right away so the pieces don't clump together, and fry until they take on a golden crust.
