Chicken "Sausage" Set in a Bottle
This bottle "sausage" is a favorite dish in a new format. It's very simple to make, using chicken leg quarters, which are inexpensive and always available. You can serve it at a family dinner or for a celebration. This bottle sausage goes well with mustard, because it tastes like aspic (kholodets). The flavor of the sausage depends on the broth and seasonings, so add everything to your own taste. Don't forget to keep the sausage in the refrigerator so it doesn't soften and lose its shape.

Step 1:
Put the chicken leg quarters in a pot and cover them with cold water — just enough to cover, no more. Set the pot over medium heat; when the water boils, skim off the foam and add salt, black peppercorns, bay leaf, and dill. Reduce the heat to low and cook the chicken until done, about 40 minutes. Pierce it with a fork after 20 minutes. Starting the meat in cold water gives you a tasty, rich broth that sets well — which is exactly what we want here.

Step 2:
Take the cooked chicken out of the pot and let it cool. Remove the skin and separate the meat from the bones. Pour 250 ml of hot broth into a separate container (a mug works). When the broth has cooled to about 60°C, add the gelatin. Stir well with a spoon and leave it for 30 minutes to bloom. You can also check the gelatin instructions on the manufacturer's packaging.

Finely chop the meat with a knife, transfer it to a deep bowl, and pour the cooled gelatin broth in through a small strainer. At this point, add the ground black pepper. You can taste the broth and adjust the flavor of the future sausage to your liking, adding any other suitable seasonings that will shape the final taste of the dish.

Take a clean 2-liter plastic bottle. Cut off the top with the neck using a sharp knife or scissors. Pour the liquid sausage mixture into the bottle. Refrigerate for 3–4 hours. In that time, the broth should set firmly and bind the chicken pieces together. Take the finished sausage out of the refrigerator, cut the bottle lengthwise with scissors, and carefully remove the sausage. Slice it and serve. Store the sausage in the refrigerator.
