Step 1:
How to make zucchini boats? Prepare the ingredients. I took fresh mushrooms, but you can also use frozen ones. Keep in mind that their frying time will increase slightly, as they will give a lot of excess moisture that will need to be evaporated.
Step 2:
Wash the zucchini (I have zucchini) and wipe it dry. Cut it in half. With a knife, make incisions inside, not reaching the skin. Spoon out the pulp and set aside. We will add it to the minced meat later, finely chopped. And the zucchini themselves will be the basis for our boats.
Step 3:
Clean the mushrooms from debris, wash and finely chop. Peel the onion from the husk and finely chop it too. Heat a frying pan on the stove. Pour vegetable oil into it. Fry the onion and mushrooms in a frying pan in oil until tender, stirring. Grate hard or semi-hard cheese on a coarse grater.
Step 4:
In the finished minced meat (I have a mixture of chicken and pork), add fried mushrooms with onions, chopped zucchini pulp and 2/3 of the grated cheese. Mix everything together. Add salt and pepper to taste. Turn the oven on 190 degrees to warm up.
Step 5:
Line the oven pan or baking sheet with baking paper. Spread out the prepared squash "boats ". Fill them evenly with minced meat. Sprinkle the remaining grated cheese on top. Place the baking sheet in a preheated oven for about 40 minutes. Determine the time and temperature of baking according to your oven.
Step 6:
For "boats " sails are needed. We will make them from fresh cucumber. Pre-wash it, cut off the edges. Thinly slice into rectangular plates. This can be done either with a very sharp ordinary knife, or with a special knife for peeling vegetables. Use a toothpick to shape the cucumbers into a sail.
Step 7:
Stick toothpicks with a cucumber sail into the ready-made hot squash boats and serve immediately to the table. Enjoy your meal!
With this recipe, you can accomplish several goals at once. Firstly, to feed the whole family quickly and deliciously, combining both side dish and hot in one recipe; secondly, to surprise guests with an original serving of a simple dish if a festive dinner is coming, and, again, by feeding them deliciously; and, thirdly, to always have a proven good recipe for cooking in stock young zucchini, in which season, there are a lot of them. So this recipe has some advantages!
