Step 1:
How to make kefir pies in the oven? Measure out the necessary ingredients. Kefir can take any fat content. Dry yeast can be replaced with fresh pressed yeast, based on the proportion of 1:3. That is, they will need to take 30 grams.
Step 2:
Pour kefir and vegetable oil into a saucepan. Mix it up. Put a saucepan on a slow fire and heat the mixture to 37-39 ° C, stirring constantly. Then remove the saucepan from the heat.
Step 3:
Pour sugar and salt into warm kefir and stir until completely dissolved.
Step 4:
Sift wheat flour into a deep bowl.
Step 5:
Add dry yeast and mix.
Step 6:
Use a spoon to make a recess in the flour.
Step 7:
Pour the kefir mixture into the recess in the flour.
Step 8:
Knead a soft elastic dough. Knead it for about 10 minutes. I do it in a food processor. Keep an eye on the consistency of the dough - you may have more or less flour than me, keep this in mind.
Step 9:
The dough should keep its shape well, be tender, elastic, not sticky. Roll the dough into a ball.
Step 10:
Put the dough in a bowl, cover with a towel and leave in the heat for 30-40 minutes. We need it to rise a little.
Step 11:
Proceed to the filling. You can use any one of them. I have boiled rice with egg. Pre-boil the rice in a large amount of salted water until it is half cooked. Put the rice in a colander and let the water drain. Cool it. Hard-boiled eggs, cool, peel and cut into small cubes. Wash the cilantro and dill and dry it. Chop the greens finely. In a bowl, combine the crumbly rice, eggs, herbs, salt and pepper.
Step 12:
Mix all the ingredients of the filling well.
Step 13:
Divide the dough that came up into 12-14 identical pieces (I got 14 pieces of 60 g each) and roll them into balls.

Flatten each ball on a floured surface into small round cakes.
Step 15:
Put 1-2 tablespoons of filling on each piece of dough.

Form the remaining pies in the same way.
