Cooking method
-
Step 1:
Gather the ingredients you'll need to make braised cabbage with beans.
-
Step 2:
Wash the beans and soak them in cold water for a few hours or overnight.
-
Step 3:
Boil the beans in salted boiling water until soft. This takes about 50 minutes. Salt the beans 15 minutes before they're done.
-
Step 4:
Drain the cooked beans in a sieve to let the water run off.
-
Step 5:
Wash the cabbage and remove the outer leaves. Shred the cabbage into thin strips.
-
Step 6:
Peel the carrot and grate it on the coarse side of a grater.
-
Step 7:
Peel the onion and cut it into small cubes.
-
Step 8:
Sauté the carrot and onion in a skillet with vegetable oil for about 10 minutes, stirring occasionally.
-
Step 9:
Add the prepared cabbage to the skillet and stir. Add a little water.
-
Step 10:
Braise the cabbage, covered, stirring occasionally. Add a little more water as needed to keep the vegetables from scorching.
-
Step 11:
Cook the cabbage over moderate heat until almost tender. Salt the cabbage, add the tomato paste, and stir.
-
Step 12:
10 minutes before the end of cooking, add the boiled beans to the cabbage along with the basil, and stir. You can add any other seasonings and spices to taste.
-
Step 13:
Cook the cabbage over low heat until fully tender.
-
Step 14:
Serve the braised cabbage with beans, sprinkled with finely chopped fresh herbs. Enjoy!
- Beans contain a maximum amount of plant protein, along with acids essential to the body. Beans are especially valued by vegetarians, since their plant protein is close to animal protein in nutritional value, so this vegetable can replace some kinds of meat. Beans add nourishment to dishes and make them more filling. That's important for anyone who's fasting or who doesn't eat meat for some reason. Braised cabbage with beans can be included in both Lenten and vegetarian menus.
